Roasted Tomato Soup

Cozy Winter Delight: Slow Cooker Creamy Tomato Soup

When winter's chill makes you crave something warm and soothing, this Slow Cooker Creamy Tomato Soup is your perfect answer. Its rich, velvety texture and deep tomato flavor make it an ideal pairing for a classic grilled cheese sandwich or as an elegant starter for any dinner gathering. The slow roasting process intensifies the tomato's natural sweetness, creating a soup that's both comforting and flavorful.

If you’re lucky enough to have a garden brimming with fresh tomatoes, feel free to use those instead of canned tomatoes for a truly fresh taste. However, during the winter months, grocery store tomatoes often lack flavor and texture, so canned tomatoes are a reliable choice.

Ingredients:
- 1 28-ounce can peeled whole tomatoes, drained
- 1/4 cup olive oil
- 1 teaspoon dried Italian seasoning
- 1/2 small red onion, chopped
- 2 cloves garlic, rough chopped
- 1/4 cup chicken broth
- 1/2 cup ricotta cheese
- 1/2 cup heavy cream

Instructions:
1. Prepare the Slow Cooker: Add the drained tomatoes, olive oil, dried Italian seasoning, chopped red onion, garlic, and chicken broth to your slow cooker pot.
2. Cook the Soup: Cover and cook on low for about 6 hours, or until the vegetables are soft and the flavors have melded together.
3. Blend the Soup: Use a blender or an immersion blender to puree the soup until smooth. Transfer the pureed soup back into the slow cooker.
4. Add Creaminess: Stir in the ricotta cheese and heavy cream. If your slow cooker has a "warm" setting, switch to it to keep the soup at the perfect serving temperature.
5. Serve: Ladle the soup into bowls and serve warm, ideally with a grilled cheese sandwich for a classic, cozy meal.

This creamy tomato soup is a winter favorite that’s both simple to prepare and deeply satisfying. It’s the perfect way to warm up on a cold evening and adds a touch of luxury to any meal. Enjoy!
